Cannelloni

 I had a very busy Thermomixing weekend.  Fruit Rolls, Marmalade and Crunchie Ice-cream yesterday, and today it was Cannelloni.  This was always something that I just threw together in a bowl and whipped the sauce up in the pot with no recipe or definate quanities.   But today was the day  to TMX the recipe so I worked with what I had, and will give you the quantities that I used today.

Tomato Sauce

Ingredients

1 Onion

1 clove garlic

small handful or Parsley

small handful of Oregano

small handful of Basil

salt/pepper

1 tsp sugar

2 x 800g Tinned Diced Tomatoes

20g Olive Oil

  1. Add onion, garlic and parsley and chop for 5 seconds on Speed 6
  2. Add Oil and  saute at 100 Degrees for 3 mins at Speed 1
  3. Add tinned tomatoes, sugar, salt/pepper and cook on Varoma for 10 minutes at Speed 1
  4. While the Sauce is cooking I placed a bunch of Spinach leaves in the Varoma to steam for the first 10 mins.
  5. After the first 10minutes, I removed the Spinach, and set the sauce to cook for a further 10 minutes on Varoma at Speed 1
  6. Tear the basil and addin the last 30 secs
  7. Taste the sauce and adjust the seasoning then pour it into the Thermoserve dish and keep it warm

Cannelloni Filling

Ingredients

220gm Feta ( I used low fat Aussie feta)

375g tub Ricotta ( I had Light & Smooth Ricotta  in the fridge)

2 Eggs

Salt/Pepper

Bunch Spinach

  1. Add all ingredients and mixed for 10 seconds at Speed 5
  2. Scape down the sides and mix for a further 5 seconds at Speed 5

Putting it all Together

I didn’t have a piping bag so I put the Cannelloni filling into a Zip Lock bag.  Leave the ziplock open but twist the bag so that the filling goes to one corner.

Cut a hole in the corner of the bag to make yourself a piping bag, then gently pipe the mix into your cannelloni shells.  I just used the packet ones – no need to precook just fill ’em up!

Lay them into an oven dish top with the Tomato Sauce and cheese.

Bake in the oven for 30 mins at  200 degrees

Tips/Hints

  1. I served this one with TMX Focaccia from the Every Day Cookbook and a salad
  2. Freeze the rest of the Tomato Sauce and use it for a pizza or pasta sauce
