CREAMY CHICKEN SANDWICH FILLING
Hey guys,
Following on from our party foods, this is always a hit for little sandwich fingers or a good one for yummy sangers! It’s also really good on a toasted sandwich warm.
INGREDIENTS:
2 Chicken Breast
1L Chicken Stock
1/2 Red Onion
200g Sour Cream
200g Mayo
1/2 Bunch Fresh Coriander
Salt and Pepper to taste.
METHOD:
- Place chicken breast whole into a saucepan and cover with the chicken stock. Slowly simmer for 20 minutes, or until your chicken is thoroughly cooked. Cooking time will depend on the size of the chicken breast. Once cooked remove from stock and allow to cool.
- Place cooked chicken breast, red onion, sour cream, mayo and coriander into the TM bowl. Chop on speed 5 for 3 seconds. Scrape Sides.
- Check consistency and chop again on speed 5 for 3 seconds if required.
TIPS:
- Whilst this recipe so far only requires the TM to chop and mix the chicken mix, you could definitely use the basket or varoma to cook chicken with the stock in the bowl. Next time I make this mix I will give it a go and update the recipe.
- Whilst this recipe calls for the 200g of both sour cream and mayo, this will also depend on additional ingredients. If you have larger chicken breast you may want to make the mix smoother with the extra mayo / sour cream.
- Always taste the mix to ensure your happy with the taste. Adjust and season accordingly.
- You can switch the coriander for parsley, or both for a different taste. I am a little bit coriander crazy at the moment and luckily my little ones love it too.
- It makes a great combo with lettuce or avocado.
