I must be the only Thermomix owner that has never done the Beetroot salad, or had it presented at a demo. It just never tickled my fancy. My memories of Beetroot are all centred around camping. It was always canned, made the sandwiches soggy and stained the tupperware containers. But last week, when we got our Family Fruit & Vege box delivered, it included some fresh beetroot. I looked at it……..wondered if it would make the vege stock red, and didn’t really think I was going to have a use for it. That was until I sat down with my copy of In the Mix: Great Thermomix Recipes by Dani Valent.
Page 77 has a Beetroot, Pomegranate & Pistachio Salad, and as fate would have it, Pomegranates were on sale at Coles this week as well. I can take a hint, so figured that the world was trying to tell me to go ahead, and try it! And that is what I did! The book is new to market, so I don’ think I should include the recipe just yet (maybe I can update later?), but I wanted to tell you about some of the fabulous recipes and my experience with them.
My beetroot and pistachios had a real woody flavour, but it was beautifully offset by the freshness of the mint, dill and parsley. The pomegranate provided a welcome surprise and the little pops of juice were a real sensation in my mouth, and with a slight hint of rosewater, the dish just came together well.
Give this one a try for your next dinner party or BBQ and surprise your guests with a new salad, which also is rich in antioxidants and nutrients, and can help lower blood pressure and prevent cardiovascular problems. You can find out more about the health benefits of Beetroot here
