Jaffa Mini Muffins

Hey Guys,

So after wondering what I could make for my little Ruby’s first day at kindy I wanted something that she would eat and also something healthy, I got to the kitchen to discover firstly that it was high time i actually went to the supermarket. Secondly we had heaps of oranges so I thought Jaffa it was! This recipe made about 36 mini muffins and if you wrap them into serves of 2 or 3 and freeze they make a perfect mid morning snack that you can grab straight from the freezer in the morning.

 

INGREDIENTS :

Rind of one orange

200g Raw Sugar

100g Butter

220g Plain Flour

2 Teaspoons Baking Powder

2 Eggs

170g Milk

30g Cacao Powder

 

METHOD:

  1. Add raw sugar and orange peel into TM and blitz on speed 9 for 30 seconds.
  2. Add all remaining ingredients and mix at speed 5 for 30 seconds. Scrape sides and mix again if required.
  3. Fill mini muffin or muffin tray 3/4’s full with mixture and bake at 180 degrees. 10 – 12 minutes for the mini muffin size.
  4. Allow to cool on a cooling rack.

TIPS:

  • I did not use patty cases for the muffins as I have a kindy aged school goer so I figured to do away with the paper would be easier for her.
  • Adjust the cooking time if making larger muffins.
  • You could ice these with a nice orange icing. I didn’t bother for school lunches and freezing but if I was to make them again I would definitely do an orange butter cream icing.
  • Freeze for up to 3 months.
  • I have used Cacao powder as I prefer to use it but you can substitute for coco powder.
