Nutty Cereal bars

 

With all this talk about museli bars on the Facebook page, I remembered that I had once started making some Popcorn Bars from the Lunchbox cook book and got half way through and realised I didnt have any popcorn…….Good one!  Anyway, I improvised and added all those left over bits of cereal that seem to accumulate in my cupboard.  Anyway…..the first time was a bit of a disaster………………..but not today, my friends!!!

Leftovers in the cereal box don’t need to be thrown away, you can use them in some form or another to make a new meal or snack.  I already use the leftover CornFlakes to coat chicken for the kids (yummo!), but today I managed to clear out the Cocopops, Rice Bubbles and Cheerios. 

Ingredients

110g raw caster sugar

80g honey

110g peanut butter

50g butter

30g slivered almonds

20g chopped apricots

30g dried cranberries

60g Rice Bubbles

40g CocoPops

100g Cheerios

Method

  1. Place sugar, honey, butter and Peanut Butter in to bowl, and mix on Reverse at 100degrees at Speed 1 for 6 minutes  or until melted
  2. Add almonds, apricots and cranberries and mix on Reverse for a further 20 seconds at Speed 1
  3. Add Rice Bubbles, CocoPops and Cheerios and mix on Soft Speed Reverse for 30 seconds.
  4. Turn the mixture out into a bowl and mix through with your hands or wooden spoons and the mix will be quite sticky
  5. When you are happy with the consistency, press into a lined tray and refridgerate until set
  6. Keep your bars in the fridge until ready to eat

Hints & Tips

  • I am sure you could use lots of other cereals too, but you may need to adjust the amounts of honey, butter and Peanut Butter accordingly
  • Substitute the dried fruit for whatever is left over or takes your fancy
  • Press the misture into the tray firmly to avoid it breaking up later
  • Cut into small bars as the longer you make them, the more likely they are to break
  • Melt white or dark chocolate and drizzle over bars for added and added choc hit
