Prince Williams Wedding Biscuit Cake

Hi Guys,

Hope everyone enjoyed the Royal Wedding extravaganza! We LOVED it! It inspired me to convert Prince Williams favorite treat which he had made into a wedding cake. Shhh don’t tell William but it has a striking resemblance to hedgehog. But this week we are all Royal and fancy so no ‘hedgehog’ around here!

It’s so super easy and oh so delicious!

Ingredients :

120g Chocolate. I used good quality organic fair trade chocolate. It suggested to use Dark and I did but I am more of a milk fan so go with what you like best!

180g tea biscuits (I used Marie biscuits but you could use anything in that style. If your a mum you probably have milk arrowroot as a staple )

100g Sugar

120g Butter

1 Egg

Chocolate for icing.

Method:

  • Add sugar and mill on speed 9 for 10 seconds
  • Scrape sides insert butterfly and add butter.
  • Cream butter and sugar for 30 seconds speed 4
  • Remove Butterfly
  • Add chocolate into TM bowl.
  • Melt / Combine for 4 minutes speed 3 50 degrees
  • Allow to cool for a couple of minutes. Add egg and mix for 5 seconds speed 4.
  • Add Biscuits to the bowl and mix on speed 3 until all combined, time will be between 15-30 seconds. I had a helper who broke all my biscuits in half for me first. It was mainly to keep her away from the chocolate with an important job 🙂 you will need to keep a really close eye on this stage, you want to mix it with out blending it all together. Try to keep a good consistency.
  • Pop into a spring form cake tin and push it all down to give it a nice smooth finish.
  • Pop it into the fridge for at least 3 hours.
  • Melt chocolate for icing and decorating into the tm bowl. Melt speed 3 4 minutes 50 degrees.
  • Turn cake out of tin and pour chocolate over top and spread evenly.
  • Cut into slices and enjoy!
