Roasted Capsicum, Onion and Garlic Salsa 

We have a couple of sure fire winners in our house. You know those meals you fall back on when you know the little people in your house love them? And one of them is Mexican. Ruby is a nacho’s freak! And they will eat anything wrapped in a pita, flat bread or tortilla! However I am really not much of a fan of the shop bought salsa. I find it hard to find one mild enough for the kids and the preservatives and just that artificial flavour. So I have tried a few times with a salsa and today I have come up with the winner!! Was beautiful and would make an amazing dip with wedges of flat bread!

So here is the Recipe – I’ll add the dip and then add the post about the great mid-week healthy meal!

INGREDIENTS:

  •  1 Large Red Capsicum
  • 1 Large Red Onion
  • 3 Cloves Garlic
  • Olive Oil
  • 500g Roma Tomatoes
  • 700g Water ( To Steam Tomatoes)
  • Handful Fresh Mint
  • Handful Fresh Coriander
  • Juice of 1 Lime
  • Salt and Pepper to taste
  • Chilli (optional)
METHOD:
  1. Chop the onion and Capsicum into wedges, and peel garlic. Place in a baking tray with a splash of olive oil and roast in a hot oven for 40 minutes. Give the mix a stir every 10 minutes to monitor that it’s not burning.
  2. Whilst that is roasting. Chop tomatoes in half. Add Water to the Thermo and place the tomatoes into the basket. Steam for 10 minutes, Varoma, on Speed 3.
  3. At  this stage you can scoop the seeds out of tomatoes or use them whole. Discard water.
  4. Add tomatoes to the bowl with the finished roasted onion, garlic and capsicum and the remaining ingredients. Set to closed position and Pulse 2 or 3 times – This will depend on the texture of the salsa.

TIPS: 
  • This is great served hot or cold!
  • I have omitted the chilli out of mine tonight as it’s for the kids too.
  • Would make a brilliant topping for a roast potato with sour cream, bacon and cheese! And you could save time and roast the potato’s while you roast the capsicum mix.
  • If you wanted a ‘fresh’ Salsa leave the tomatoes raw. (Take out step 2)
  • By roasting the garlic it give a beautiful sweet flavour so 3 cloves isn’t like 3 raw cloves!!
