Ruby Garden Cocktail

Hi Guys,

Fresh back from our fantastic holiday over in Kota Kinabalu – We stayed here… Shangri La – Kota Kinabalu Tanjung Aru Resort! And Oh my if anyone is looking into booking holidays… pure luxury BRILLIANT for little people on the resort and pretty much heaven…

Which leads me to cocktails at the sunset bar watching the sun set over the ocean and a the Islands. It was totally breath taking! I fell in love with a cocktail called the Ruby Garden. From what I could gather it was a spin on a strawberry margarita with basil and mint. It was SO refreshing and I may have first ordered it because it was a ‘Ruby’ but kept ordering it because it was divine! I hit the thermy tonight with my take on the super yummy cocktail and got pretty close to it!

This recipe makes enough for about 4 or 5 cocktails… Unluckily Luckily for you I am writing this after just one of those… I have the Jug staring at me – I am pretty sure it’s saying – “Go on, I dare you!”

This is a great summer cocktail and don’t let the basil put you off – it is seriously surprising the refreshing taste it gives! In fact I think this is the PERFECT Christmas Cocktail! All that red and green, and really who isn’t looking for a good stiff lunch time drink on Christmas Day? Right before your nap…

1  punnet of Strawberries, hulled, halved and washed.

handful of Ice

95g Lime Juice

100g Tequila

70g Triple Sec

100g Soda Water

6 -8 large fresh basil leaves

Handful of fresh mint leaves

  1. Add The strawberries, a handful of ice (used to chill the mix) lime juice, tequila and triple sec to the TM and mix for 20 seconds speed 8. It should be nice and smooth with no strawberry lumps.
  2. Add the basil, mint and soda water to the mix. Set lid to closed position and give it 1 or 2 turbo blasts. You still want some texture with the herbs.
  3. Serve over Ice in a tumbler glass and a straw.
PS – this is the sunset I watched whilst drinking one of these little guys…
