These little babies are a Donna Hay creation and I have done the conversion for TMX. They looked great in her picture……..and then I made them in the Thermomix, and now I can confirm – They are GREAT!
The flavour is subtle but delicious, the lemon sugar tops the biscuit off perfectly and makes them just a little bit naughty. With just the right amount of chewiness and crumble, these are my favorite cookies at the moment.
Ingredients
330g caster sugar
2 Tbs lemon zest
225g softened butter
1 egg
1 Tbs lemon juice
300g plain flour
1 tsp baking powder
1 Tbs poppy seeds
Method:
- Add 110g of caster sugar and 1 Tbs lemon zest to the bowl. Mix for 10 seconds on Speed 8, then set aside
- To the empty bowl, add the remaining caster sugar and the butter. Cream in the bowl for 30 seconds on Speed 5
- Add egg and lemon juice and mix for 5 seconds on Speed 5
- Add remaining ingredients, including lemon zest and poppyseeds, and mix for 10 seconds on Speed 5. Scrape down bowl and mix again for 5 seconds on Speed 5
- Roll the mixture into balls, then roll through the lemon sugar and place on a lined try. Leave enough room for the biscuits to spread.
- Bake for 12-14 minutes in oven at 180degrees or until just golden, then cool on a wire rack
- Sprinkle with more lemon sugar and serve
Hints & Tips
- The mixture will appear a litle wet – its supposed to be like this.
- Make sure you leave enough space for the biscuits to spread and try to use a big tray as mine were happier on the big one.
- The mix makes about 38 biscuits which was a lot, I have rolled the remaining mixture into balls and into the sugar and placed them in the freezer to use later
- These are great with a coffee, and would just be beautiful at a morning team with the ladies
