Vixen Boost

Ok, so this one is not very technical, but I did want to jump in and let people know that not everyone likes Kale (see Cass’ Purple Juice), and sometimes, you just want to see how something simple can be yummy…..AND taste great with a little vodka if you are so inclined.  I normally make this one with whatever I have in the fridge and freezer.  At the moment I have heaps of frozen strawberries because I bought a box at the local Farmers Market, and there were so many that freezing was the only option.  But if you don’t have strawberries, you can do the same thing with any other frozen berries or even mango!

There is no need to defrost the fruit, likewise, if you are using fresh fruit, just be mindful that you will need less liquid, as the fruit will have it juice to rely on.  Anyway, on a scorcer 41 degree day like today, I was grateful for frozen fruit, the Thermomix and the pool……..now all I need is a pool boy and someone to wave giant fans at me

Ingredients

350g Apple Juice

1 frozen banana

100g frozen strawberries

100g sorbet (I had mango this week, but you could use anything)

200ml mineral water

200g Ice

Method

  1. Place strawberries, banana, ice, apple juice and sorbet into the bowl
  2. Blitz on Speed 10 for 15 seconds
  3. Check the consistency and see if all of the ice is broken down -you may need a little more apple juice
  4. If the consistency looks good (ie it moves in the bowl but isnt quite pourable) , add the mineral water and mix on Speed 5 for 5 seconds to incorporate – this will thin it out a little
  5. Serve in a glass by the pool (pool is optional and not part of the ingredients!)
