Cheese and Bacon Scroll.

Hi Guys,

Yesterday I had a house full of 3 year olds and so was nearing afternoon tea time. I put a spin on Meg’s CheesyMite Scrolls and they were a massive hit!

So here is Meg’s recipe for the dough…

Ingredients:
300g OO flour
1 1/2 tsp dried yeast

pinch salt
1 tsp sugar
185g lukewarm water
1 tsp oil
3 rashes of Bacon Diced
grated cheese (I used Cheddar and chopped in TMX)

Preparation:
Add the flour, yeast, sugar and salt. Mix for 5 seconds on speed 3 .Add the water and oil and mix for  6 seconds on speed 8 to combine.
Using the closed lid position and knead for 2 minutes.

Remove dough and place on a mat . Leave to prove for 30 mins.

Roll out dough to approximately 40cm x 30cm.

Sprinkle whole area with cheese. Leave a little aside to sprinkle on the top.

Evenly spread bacon over top of cheese, also leaving a small amount to sprinkle on top.

Roll the dough into a ‘log’ from the long side.

Slice into rounds and place together on a tray so that they are just touching.  I let them reast again for 15 minutes and then popped them in the oven . I  used my Thermomix bread mat to prove the dough and also used it in the oven too.  Bake for 15-20 minutes at 200 degrees C.

We ate them warm straight from the oven and they were so yummy!

This little guy – I swear we must have 15 of them because he seems to find me where ever I go… And he is a photo-bomber! So I am giving him some lime light and moving him out of my way… again!
